Adam’s Pancakes

My husband doesn’t cook much, but these pancakes are a go to recipe when I am having a crazy day.  There are many a day saved by his pancakes, where I think I would pull my hair out if we didn’t have this family go-to for emergencies.  Today my daughter had to go to the lab last minute for a test and I was happy we could go home afterwards and know we had his pancakes at the end of a long day.  We like this recipe because it is mostly simple ingredients you can easily keep on hand for other things.  Who says breakfast can’t be dinner?

The girls know to expect these when I can’t cook, so it has almost become a family tradition.

Simple Ingredients:

1 and 1/2 cups of flour

3 and 1/2 tsp baking powder

1 Tablespoon sugar

1 Teaspoon salt

1 and 1/4 cups milk

1 egg

3 Tablespoons melted butter

1/4 Teaspoon cinnamon (optional)

Mix all ingredients together.  Place about 1/4 cup on griddle and turn when each side begins to show bubbles.
